For many years tequila had the algave market secured, and was probably the only spirit native to Mexico. That changed several years ago when Oaxacan mescal made its way into bars around the world. Now we are seeing Mexican spirts such as stool and bacanora entering the US market.
THE RETURN OF TIKI COCKTAILS
Tiki bars became popular in the US in the 1930’s when they were trying to recreate a tropical retreat. This went out of fashion in the 70’s, but in the last two years have become popular again with many serving heavy rum cocktail creations in ceramic mugs. Now it seems that the throwback to the 1930’s tiki culture is spreading across Canada. There are now many tiki bars opened in Toronto and they believe it is only going to get more popular.
THE RETURN OF TRADITIONAL LIQUEURS
It is possible that many liqueurs that were standard at many bars, such as Baileys, and Kahlua where avoided by the cocktail community. But it seems that now they are making their way back into the hands of the top bartenders. At a bar in Hollywood, California a bartender has created a cocktail named “The Midori Shower” and features Midori, Hendrick’s Gin and muddled kaffir lime leaves.
LASTING DRINK LISTS
Approximately ten years ago cocktail lists were unchanging such as the bars that there were in. But tradition gave way to the seasonal menu, many bars and hotels are now returning to the permanent menu instead.
